Cooking low GI Food. My cooking journey as I learned how to help myself by cooking low Glycaemic Index and low Glycaemic Load food to reduce blood sugar and weight. This low GI, low GL cooking has given me back energy, and is keeping my blood sugar low as well as the weight loss. So far I've lost over 29 kilos.

Tzatziki
Two cucumbers, peeled, cored and grated
3 tablespoons thick yoghurt
Juice one lime
Small handful of dill, stalks removed
A generous handful of salt
Put a sieve over a bowl and add the grated cucumber.
Toss in the salt and leave to drain for 30 minutes. Rinse and squeeze to remove the liquid.
Stir the lime juice with the cucumber. Add the other ingredients and serve immediately.
